DARK BEAN CHOCOLATE CAKE
Dark Bean Chocolate Cake
Apparently Gluten Free, but delicious according to my domestic tasters who can be super critical
Ingredients
BEAN CHOCOLATE CAKE
- 1 410g Red Kidney Beans Drained and cleaned well
- 1 Tbsp Vanilla Extract
- 5 Eggs
- 1 Tbsp Fresh Orange Juice
- ⅓ Cup Cocoa Powder
- ½ tsp Bicarbonate Soda
- 1 tsp Baking Powder
- 1 tsp Cinnamon
- ⅓ Cup Coconut Oil
- ½ tsp Himalayan Salt
- ½ Cup Sugar (not Castor Sugar)
ICING
- 2 Tbsp Fresh Orange Juice
- 1 Cup Icing Sugar
Instructions
CHOCOLATE BEAN CAKE

Preheat the oven to 180°C

Grease a 20cm round cake tin

Combine Red Kidney Beans, orange juice, vanilla extract, coconut oil and 1-2 eggs in a food processor. Process until smooth, roughly 5 minutes

Add the remaining ingredients and process for another minute, until well combined

Pour into greased cake tin and bake for 40 minutes

Remove from oven and allow to cool down slightly, then turn it onto a cooling rack
ICING
-
Sift 1 Cup icing sugar into a bowl

Add 2 Tbsp orange juice (if needed add more in small bits)
