COCO POPS MOUSSE CUPS

QUICK AND EASY, PERFECT TO WAY TO CREATE LUNCHBOX TREATS WITH THE KIDS

Ingredients

BASE

  • 100 g Chopped Milk Chocolate
  • 50 g Butter
  • ¼ Cup Golden Syrup
  • 3 Cups Kelloggs Coco Pops

MOUSSE

  • ½ Cup Whipping Cream
  • ½ Cup Chopped White Chocolate or White Chocolate Chips
  • 2 tbsp Cream Cheese
  • 1 to 3 tbsp Icing Sugar, divided
  • ½ tsp Vanilla Extract
  • Pinch Salt
  • 6 In Season Berries of your choice (I used Strawberries)

Instructions

  1. Lightly grease a 12 hole muffin pan

  2. In a medium saucepan stir the chopped milk chocolate with butter and golden syrup on medium heat until melted.

  3. Add and stir in the Kelloggs Coco Pops

  4. Press mixture into base and sides of muffin pan holes and chill for 20 minutes

  5. In a medium mixing bowl, beat the whipping cream until stiff peaks form, and set aside

  6. Gently melt the chopped white chocolate over low heat, stirring frequently.

  7. In another bowl mix the cream cheese and 1 Tbsp icing sugar until light and fluffy

  8. Whisk in the white chocolate, vanilla essence and salt on medium speed until well combined. Fold in the whipped cream.

  9. You can use a mixer to help mix it altogether, but at low speed, until well combined. DO NOT OVERBEAT!

  10. Scoop the mix into the Kelloggs Coco Pops cups.

  11. Allow to chill for at least 4 hours or until set. Garnish with halved strawberries or in season berries.
