AVOCADO AND COCONUT LOAF
Low-carb and Gluten Free
Ingredients
- 1 Large Avo you can add another half if you like
- 3 Eggs
- ¼ Cup Syrup
- 1 tsp Bicarbonate of Soda
- 1 Cup Coconut Flour
- ½ tsp Vanilla Extract
- ½ Cup Desiccated Coconut
- 1 Cup Plain Yoghurt
Instructions

Put the oven on at 180°C

Add the Avocado to the food processor, until the avocado becomes a smooth paste

Add the Eggs and mix

Add the Yoghurt and mix

Add the Vanilla Extract and mix

Add the Desiccated Coconut and mix

Add the Syrup and mix

Add the Coconut Flour and mix

Add the Bicarbonate of Soda and mix but not too long

Pour the batter into an oiled loaf tin

Bake for 30 minutes or until cooked
