Ingredients
- 1 - 1.5 Cups white/brown rice
- 1/2 Red Pepper
- 1/2 Yellow Pepper
- 1 Tin Tuna
- 1 Packet Olives
- 1/2 Onion
- 1/2 Cup Corn Kernels or Mixed ready chopped veggies
- 1 - 2 Rounds Feta Cheese (optional)
- 1 Spoon of Coconut oil
Instructions
- Cook rice as you usually do or as per packet instructions
- Chop up the onions, peppers
- Heat a spoon of coconut oil
- Add and braise the onions, then add the peppers and mixed veggies and corn
- Add the tuna to the onion mix
- Once the rice is cooked, add the braised onion mix to the rice and stir all the ingredients through
- Add salt and pepper to taste
- Let it cool before adding the Olives and serving as is
Notes
- I used Mammachefjozi's original recipe as a guide as I didn't have all the ingredients.
- As I didn't use Tuna with Oil, I added a dash of Olive oil to the dish before stirring everything together.
