SUPERDAD'S FABULOUSLY FAST TUNA RICE SALAD

1 - 1.5 Cups white/brown rice 1/2 Red Pepper 1/2 Yellow Pepper 1 Tin Tuna 1 Packet Olives 1/2 Onion 1/2 Cup Corn Kernels or Mixed ready chopped veggies 1 - 2 Rounds Feta Cheese (optional) 1 Spoon of Coconut oil
Cook rice as you usually do or as per packet instructions Chop up the onions, peppers Heat a spoon of coconut oil Add and braise the onions, then add the peppers and mixed veggies and corn Add the tuna to the onion mix Once the rice is cooked, add the braised onion mix to the rice and stir all the ingredients through Add salt and pepper to taste Let it cool before adding the Olives and serving as is
I used Mammachefjozi's original recipe as a guide as I didn't have all the ingredients. As I didn't use Tuna with Oil, I added a dash of Olive oil to the dish before stirring everything together.
