NORTH AFRICAN (MAGHREB) CHICKEN

In the mood for something new, I tried out a recipe from North Africa who are known for their spices leaving the kitchen with a wonderful aroma. This dish is very spicey (not chilli hot). We served it with Pearl Couscous, but you could serve it with rice or Flatbread.

DELICIOUS NORTH AFRICAN CHICKEN

Ingredients

  • 1 Onion sliced or diced
  • 1 Tbsp Olive Oil
  • 8 Pieces Chicken
  • 1 Tbsp Fresh Coriander Chopped
  • 1 tsp Ground Salt
  • 1 tsp Paprika
  • 1 tsp Tumeric
  • 1 tsp Ground Cumin
  • 1 tsp Cardamon
  • ½ tsp Cinnamon
  • ½ tsp Chilli Powder
  • ½ tsp Pepper
  • 1 Cup Raisins
  • ½ Cup Chopped pitted Green Olives if you enjoy olives add a full cup
  • 1 Medium Orange sliced you can swap the orange for a lemon of the same size
  • 1 tbsp Crushed Garlic
  • ½ Cup Chicken broth you can use water if you don't have chicken broth

Instructions

  1. Don't switch on your Pressure Cooker, Slow Cooker, AutoCooker, InstantPost ...yet

  2. Add Oil

  3. Add Onions and stir until well combined

  4. Add the Chicken pieces on top of the oiled Onions

  5. Add the Spices evenly across the top of the Chicken pieces, no need to stir

  6. Add the Raisins

  7. Add the Olives (I sliced them in half)

  8. Add the sliced Oranges or Lemon

  9. Add Garlic

  10. Add Chicken broth

  11. Cover and Switch ON the Pressure Cooker, AutoCooker, InstantPot or Slow Cooker

  12. On the AutoCooker, I used the Pressure Cooker setting for 2 hours and then opened the lid and used the Fry setting for 15 min to thicken the sauce a little. In the Slow Cooker you may need to cook it for 4 hours.
