BRITTA CAKE or BRITTA KAKKU

Ingredients

THE CAKE

  • 1/2 Cup Butter or Margarine
  • 1/2 Cup Sugar
  • 1 tsp Vanilla Extract
  • 3 Egg YOLK Keep the white aside, you need it
  • ¾ Cup Flour
  • 2 tsp Baking Powder
  • ½ Cup Milk

THE MERINGUE

  • 3 Egg WHITES
  • ¾ Cup Castor Sugar

CREAM FILLING

  • 1 Cup Whipping Cream
  • 1 Cup Greek Yoghurt I used double thick cream
  • 2 Tbps Icing Sugar

ASSEMBLING THE CAKE

  • 2 Cakes
  • 1 Bowl Cream Filling
  • 3 Cups Season Berries

Instructions

MAKING THE CAKE

  1. Cream the butter and sugar until light

  2. Add the remaining ingredients and beat well

  3. Divide the mix evenly between two cake baking containers or 1 flat baking tin and set aside

MAKING THE MERINGUE

  1. Beat the egg whites until stiff

  2. Add the sugar and continue beating until peaks are formed

  3. Scoop the meringue and evenly drop onto the top of the cake batters without mixing the two

  4. Bake for 15-20 minutes or until the top is golden. Remove from the oven and let it cool down in the pan.

MAKING THE CREAM FILLING

  1. Whip the cream until fluffy

  2. Add the yoghurt and sugar and beat a little more to combine well

ASSEMBLING THE CAKE

  1. Plate 1 of the cakes on the serving plate

  2. Spread ⅓ of the cream on the cake

  3. Add ⅔ of the berries to the cream top

  4. Add ⅓ of the cream over the berries

  5. Add the second cake on top of the cream and berries

  6. Add the remaing cream on top of the cake

  7. Decorate the top of the cake with the remaining berries

  8. Bom Apetite!
