Ingredients
- 1 Packet bacon strips
- 2 Cups small butternut cubes
- Dried Thyme to taste
- 300g Pasta
- 1 Cup frozen spinach
- Parmesan cheese to taste (optional)
Instructions
- Heat the oven to 200°C
- Cook the Pasta as per instructions on the packet
- 2 minutes before it's done, add the frozen spinach to the pasta
- Place the bacon onto an oven dish and roast it in the oven until just before too crispy and the fatty bits have rendered off
- Remove the bacon from the dish and chop it up onto another dry dish
- Add the chopped butternut cubes to the bacon juices on the oven dish - making sure to space them out
- Add Salt and Pepper to taste
- Add the Thyme
- Mix it all together with the butternut
- Increase oven temp to 220°C and roast the butternut for 20 minutes
- Drain the water from the pasta
- Mix the roasted butternut and drained pasta and spinach
- Dish the pasta and top it with the chopped crispy bacon
- Sprinkle with parmesan cheese (optional)
